baked in the pan

Lyevitò’s pan pizza Same outside, different inside

It looks like any other pizza. You notice the difference with the first bite and at the end of the evening: I bake it twice in an iron pan and flip it halfway. Crisp underneath, soft inside, light and easy to digest.

The difference

A pizza like any other. Until you taste it.

Round, with a golden crust, mozzarella and tomato where they belong: on the table it looks like any other pizza. You can’t see the difference, you taste it, and you feel it afterwards: it’s lighter and easier to digest.

At first sight

The same

Round, all yours, with the crust and the toppings you know. No tricks, no odd shapes.

At the first bite

Different

The crisp base crunches as you bite, while the inside stays soft and fragrant. That’s the taste of flipped pan pizza.

At the end of the evening

Light

An easy-to-digest pizza: slow-risen dough, baked twice right through. You leave the table satisfied, not weighed down.

Why our pizza is easy to digest

  1. Slow riseThe naturally leavened dough, made with selected flours, has plenty of time to mature before it goes into the oven.
  2. Baked twice in the panIt bakes twice in the iron pan, right through: no raw or chewy patches to weigh you down.
  3. Topped after flippingThe toppings go on only halfway through: they cook just enough and keep their flavour.

The Lyevitò method

Why do I flip it? Four steps to a light, easy-to-digest pan pizza

It’s not a regular round pizza and it’s not pizza by the slice. It’s a whole round pizza, just for you, baked twice in the pan.

  1. The pizza maker stretches the risen dough by hand

    Stretching

The slow-risen dough is stretched by hand and goes into the pan with a drizzle of oil.

  2. Two pan pizzas in the oven during the first bake

    First bake

The first bake: the base rises, smells wonderful and turns golden.

  3. The flipped pizza being topped by hand

    Flip and top

The move that makes the difference: the crispier side becomes the base, and the toppings go on top.

  4. Freshly baked, easy-to-digest pan pizza served at the table

    Final bake

Back in the oven to finish. It comes out crisp underneath, soft inside and light.

Behind the counter

Hi, I’m Vito

I opened Lyevitò because I wanted an easy-to-digest pizza that wouldn’t leave you feeling heavy at the end of the evening. I worked on the dough and the baking until I arrived at the flipped pan pizza.

Every pizza starts from a dough ball left to rise slowly, made with selected flours. In the kitchen we make meatballs, croquettes and desserts every day, nothing pre-cooked.

Come and try it: if you love a light, crisp pizza, you won’t want to go back.

FAQ

Before you come

Why is your pizza easier to digest?

For three reasons: the dough rises slowly, the pizza bakes twice in an iron pan right through, and I add the toppings only after flipping it. The result is a light, easy-to-digest pan pizza that won’t leave you feeling heavy.

How is it different from a regular pizza?

To look at, none: it’s round, with the crust and the toppings you know. The difference is in the taste, with a crisp base and a soft inside, and in how easy it is to digest.

What is a flipped pan pizza?

It’s a round pizza baked in an iron pan in two stages: halfway through I flip it, add the toppings on the softer side and put it back in the oven. The result is a crisp base with a soft, light dough.

Are you open for lunch?

No, Lyevitò is open for dinner only, every day from 19:30 to midnight, with no closing day.

How can I book?

Online with the “Book” button on this page, or by calling +39 380 200 7132.

Do you have gluten-free or lactose-free pizza?

Yes: gluten-free pizza costs €4 extra and lactose-free pizza €3 extra. We also have gluten-free beer. If you have allergies, always ask our staff for the allergen list.

Do you deliver?

Yes, every evening through Just Eat and Deliveroo.

What is the Lyevitò Experience?

A set-price menu with starter, pizza and dessert: €16 with a Classic or Special, €20 with an Excellence, €25 with a Vito Selection pizza.
